First of all, I have to say I have zero affiliation with Cal-Organic except that I have been buying a crazy amount of their new Rainbow Carrot Chips. This is my new find that I am super excited about. I found them at two local big chain grocery stores so they should be pretty available no matter where you live. These have come up in conversations amongst friends over the last two weekends so I decided I needed to share.
For someone who really doesn’t care for raw carrots these are a game changer. It must be how thin they are, they don’t taste as dry as when you gnaw on a big carrot. I have used them in place of chips with spinach dip and pimento cheese, tossed them with a little olive oil and pink Himalayan salt and roasted them, added them to juice and eaten them on their own raw. They are delicious and give me that little crunch that I sometimes miss since I don’t eat chips regularly anymore. My daughter also seems to really like them. I have started packing in her lunch and serving at dinner time. It’s an easy way to get a serving of vegetables in, add beta-carotene, antioxidants and cancer fighting phytochemicals.
